Space Coast Cooking Empty Space Coast Cooking

Okay, I hope you guys don't mind that I'm putting this here, but... Recently I graduated from high school and I've been stuck at home for a while. That gives me plenty of time to do things, one of which is cook. Basically, I want to share with you guys some photos and comments about what I've been cooking. Don't know why; I just feel like it.

First off is today's meal of what I call Tomato Rotini:

Space Coast Cooking 002-2

It's rotini pasta mixed with a tomato "sauce" (not really, but I don't know what to call it) and with added Parmesan cheese. Served with some type of cheesy bread that my mom bought at Panera. ...It occurs to me that you gives might enjoy this more if you could actually taste it, but whatever. XD

If anyone wants the recipe let me know. Likewise, if you have any recipes that you think I should try, I'm open to consider them. Also, I'm feeling a bit creative, so if you have any idea of any BLoSC themed food item (such as meals from the show or something you think sounds like it comes from the show), I'm willing to use my limited cooking knowledge to try and whip something together using our Earth ingredients.

Even if it is BLoSC themed, I'll keep a running tab of new recipes I've tried here in this General Discussion topic so that I don't needlessly bother you guys by having my cooking all over the place.

Actually...I'm kind of curious about it. May I have the recipe, please? You can just pm me. I'll try to think of some fun recipes I know.

I seem to make mostly Italian food. That said: Biscotti!

Space Coast Cooking 001-1-1

That's little chocolate pieces in the biscotti. I found the recipe online and then altered it a bit to my preference. Just the right amount of sweetness and crunchiness, though I think I should have put more chocolate in. Other than that, these are delicious!

I personally prefer English Breakfast, but that's just me. I make Earl Grey for my mom, though! 8D Since this last biscotti adventure, I made more with white chocolate chips and macadamias; and semi-sweet chocolate chips, walnuts, and cranberries. <3

Space Coast Cooking 003-1

Chicken and Gnocci Soup! Quite like the kind they serve at Olive Garden. I found the recipe online, and now my mom refuses to take us to Olive Garden because she's happy with me just making this soup at home.

I wanted to take a picture showing some of the chicken and gnocci pieces, and some of the vegetables better, but I had trouble doing that, so... You're stuck with this one.

I also like English breakfast. I normally drink earl grey because of that bitterness that it has.
Cranberries in biscotti? I never had that before. That sounds good.

I've never had chicken and gnocci soup before. At least, I don't think so. That looks great! I can definitely understand your mom's opinion. I've only been to olive garden once. From what I remember the one we went to was way too expensive.:/

Space Coast Cooking 004-1

For Halloween, I made fudge! I got the recipe online somewhere. This is made with cream cheese and yellow (white) chocolate and pretzels and dried cranberries and candy corn. Hence the name, candy corn fudge.

They actually looked better than this before, but I forgot to take a photo when I first made them, so this is a photo of the left-overs after they had melted slightly and been re-refrigerated.

Okay, seriously... I'm made Parmesan Chicken, Herb Roasted Parmesan Potatoes, various kinds of cake, some cookies, and I have a recipe for crepes that I've not made recently but probably should so I can show off pictures of it here.

I've just been too lazy to take out my camera and take photos of my food after I make it. XD I much rather just go straight to eating it. <3

Today's meal is Parmesan Breaded Chicken Breast!

I found the recipe online, and let me tell you, it is delicious. I serve it with mashed potatoes (though we cheat on the effort of mashed potatoes and get these Bob Evans microwave things). This is one of my favorite meals.

The preparation takes 10 minutes, tops. Cooking time varies based on the size of the breasts, but it is typically from 40 minutes to an hour.

Well, it's not too hard to make, and the flavors are amazing. We use Parmesan that we shred ourselves, which makes it taste fresher. Mixed with the liquid coating flavors (butter, Worcestershire sauce, garlic powder), and the rest of the breading (Italian bread crumbs, parsley), and the tenderness of a properly cooked chicken, you can imagine how well everything tastes.

With a side of mashed potatoes, the meal is just made complete and one of the most delicious I've had for some of the easiest work involved.

Why, yes I have~! In previous posts, I made biscotti and candy corn fudge.

I've also made various kinds of cookies, a few cakes, and once even a cheesecake, but I don't have any photos of those, unfortunately. In fact, most of my cooking is just me baking cookies and cakes, some with better results than others~.
